Wraparound windows fill the space with natural light and complement the warm wood tones and extensive greenery throughout the dining room. Flickering Snow Peak Mini Flames sit at each table, offering a new twist on candlelight dining. The walls are covered in bespoke tile upcycled from the kilns of Heath Ceramics in San Francisco. The space has an open concept offering views of the woodburning hearth from all angles. The restaurant is operated in partnership with Submarine Hospitality, well known for their nationally award-winning restaurants Ava Gene’s and Tusk.įire and nature serve as the driving inspirations for the design of the restaurant. The Pacific Northwestern focus broadens to include Japanese tea and a concise sake list available by the cup and carafe highlighting Niigata breweries from Snow Peak’s home prefecture. Takibi’s beverage program is led by legendary barman Jim Meehan, who has curated a local selection of wines, beers, beverages and spirits to mix classic cocktails with Japanese accents. Executive Chef Alex Kim works with local purveyors to source the freshest possible ingredients year-round, resulting in a menu that reflects the rhythms of nature. Named after the Japanese word for bonfire, Takibi is inspired by the food of Japan, driven by the changing seasons, and centered around an open hearth. Our restaurant Takibi is an extension of our belief in the power of gathering and the bonds built around the campfire. A restaurant was a natural way to merge these elements while furthering our commitment to inspiring connection. All our gatherings center around food and drink, and much of our gear is directly cooking or dining related – we like to say Snow Peak is the foodiest brand in the outdoor industry. Snow Peak is an outdoor brand, but we have a deep affinity for a carefully crafted meal. We cannot operate a campground in the urban core, but we believe we can create an environment centered around the moments of connection experienced in nature. In developing HQ4, Snow Peak’s Flagship and North American Headquarters in Northwest Portland, we aim to bring a distinctly Snow Peak outdoor experience into the city. We believe in the power of slowing down and enjoying pure moments of connecting with others in the outdoors.
